ingredients needed.
1c heavy cream
2 egg yolks
2 tabspoon heaped sugar
Pinch of salt
2 Earl Grey tea bags.
I split that in half though. To make one vanilla and one earl grey. I like the Earl Grey way better. And I just steeped/simmered bag of tea in heavy cream.
I poured heavy cream in a sauce pan and dropped the teabag in cold heavy cream then brought it up to a gentle simmer. Keep flame low so that cream may not curdle and tea flavoure infuse in cream for best results.
Turned off the heat and gently squeezed the tea bag. Let it cool for like ten minutes and you can temper it in.you can also cool it at room temperature.
I love Torching that is the most fun part of this recipe.Sprinkle 1 and 1/2 tablespoon of granulated sugar on top.

I’ve been experimenting with Earl Grey tea and extracting the flavor from fresh vanilla pods using 50ml of spiced rum. It was a hit with the family too!

Strain and Set: Once the mixture has thickened, strain it through a fine sieve into a bowl to remove any lumps and ensure a smooth custard. Stir in the vanilla extract. Pour the custard into ramekins or small bowls.
Refrigerate: Let the custards cool to room temperature, then cover and refrigerate them for at least 2 hours or until they are set.

Quick tip.
If you don't have a kitchen torch to caramelize the sugar, you can heat a spoon over a stove flame until it's very hot, then carefully press the back of the spoon onto the sugar layer to caramelize it. Alternatively, you can skip this step and enjoy the custard as is.
